Fresh & Light Udon Noodle Soup

This ancient oldie from the archives deserves resurfacing. I made it for dinner last week for the first time in years and we enjoyed it SO much.

This Udon Noodle Soup is easy, healthy, fresh, light, and really delicious. It all starts with a super flavorful and fragrant broth which you can make in advance to have on hand in the fridge or freezer. Then all you need to do is add cooked noodles to your bowl, ladle over some hot broth, and top with whatever you like. I like a mixture of raw and cooked veggies and herbs. Some silken tofu would be really lovely too. I give loads of suggestions in the post!
