Hi there, Reader Spicy Chickpea Smash! So simple to make with only 3 ingredients (plus salt & pepper). You can have a batch made up in minutes! Put it in sandwiches and wraps, dollop it on a pile of greens or a baked potato. It's so yummy! My current fave way to eat it is as per the pic. This Udon Noodle Soup is easy, healthy, fresh, light, and really delicious. It all starts with a super flavorful and fragrant broth which you can make in advance to have on hand in the fridge or freezer.
